I bet you are wondering how can you possibly make a pie crust that is gluten-free and tasty…well, I am pleased to say that this gluten-free almond pie crust was the bomb dot com.
Seriously, it is the right combination of crumbly, textured, crunchy, yummy, with a lovely hint of chocolate, and is perfect for any pie, like my healthy no bake peanut butter pie…and the best part of all?….it takes 2 minutes to make with a food processor AND requires no baking whatsoever.

I adapted this pie crust from my favorite lady chocolatecoveredkatie, and decided to use almonds as the main nut portion of this recipe.
So let’s get to that recipe!
Prep Time: 5 minutes
- 2 tbsp cocoa powder
- 1/2 cup raw almonds
- 1/2 cup shredded unsweetened coconut
- 1/8 tsp salt
- 1/2 cup pitted dates (about 8 small dates)
Throw all ingredients into the food processor and blend until fairly smooth (about 3 minutes). What you will get is a nicely textured, speckled mix of beauty. Then transfer to a 8″-diameter pie tin. Using saran-wrap, wax paper, or anything that will cover your hands, press down mixture into the tin to better compact into a crust. Do this at all angles until you get a smooth-looking surface. Then go ahead and add whatever pie filling you want or refrigerate if you are not going to use this crust for a while.
Then you’re done! That’s it. In literally 5 minutes, you got yourself a beautiful looking pie crust that is ready for use and delicious to eat 🙂
